3 (about 1 1/4 lbs total) Zucchini (Green Squash)
2 Tbsp Basting Oil
Salt and pepper to taste
8 oz hummus, divided
Crumbled plain feta cheese, to taste
Basil pesto sauce, to taste
Roasted red tomatoes, to taste
Preheat grill on MED.
Trim the ends of zucchini, then halve lengthwise and scoop out seeds.
Brush the inside of the zucchini with basting oil, then season with salt and pepper.
Grill, cut-side down, 4-5 min, uncovered, until the edges are slightly charred and caramelized.
Transfer to a clean work surface.
Fill each zucchini with 2 Tbsp hummus; top with feta, pesto, and roasted tomatoes.
Grill, uncovered, 10 min or until the filling begins to bubble.
